Split Pea Soup, Split Decision

When it comes to the standard way of making things, or trying something new, my husband and I are typically at odds.  For Peter, lobster has to be served steamed in a shell, shrimp can be with a cocktail sauce or in scampi.  You can’t have pizza with goat cheese and you certainly can’t have pea soup without green peas.  Until now that is, because I live by a different set of rules.

Let me just give you a little background on this.  I grew up with pea soup.  It was always a staple when we had leftover ham.  It was green and thick and not very appetizing.  So it was a huge mistake on my part, when I mentioned after our ham dinner, the idea of making soup.  It turns out, much to my dismay, that he loved pea soup.

Well, I half-thought about it and when I was at the market, I picked up a bag of split peas.  Peter would be so surprised if I actually made this for him.  But visions flashed before me of the thick green paste and I immediately scrubbed that idea and threw the peas back on the shelf.  I started to walk away and out of the corner of my eyes I saw a bag with split yellow peas.  That’s right….YELLOW peas.  I never had them before, but after looking at the back of the bag and the recipe idea it gave, I thought I could make it work.  It was a good compromise.

That weekend, since it was cold and definitely feeling like a soup day, I decided to give it a try.  I cooked my ham bone down and reserved the broth and although I did refer to the bag recipe, I did change the recipe quite a bit to make it more my style.  This was working!

The flavor was really good and the texture of the broth was more like a vegetable broth.  I was so happy because I thought his was something I could eat and Peter would love that we had split pea soup.  I really believed this was our soup of compromise.

Until my husband sat down to dinner that is.  He took a bite and it wasn’t so bad.  He took another bite and it was ok.  The third bite, he decided to tell me that pea soup was meant to be green and mushy.  This simply was NOT going to do.

So once again we were at odds.  I loved it and he did not.  He wanted his green thick mush and I liked the texture more like a broth.  And it’s okay.  It’s okay if he doesn’t like it, because he doesn’t have to love everything I make and he has his standards.  But I will probably make it again and he will probably eat it again and complain again.   And have another two helpings again.

Do you really have two helpings if you don’t like something?

 

Cold Weather and Soup

There comes a point in time when I am tired of the summer weather.  I know many of you won’t agree with me but I long for sweaters and fires and cozy comfort.  That is probably one reason why I decided I needed to ignore the 75 degree weather in the beginning of October and make some soup.

I love soup.  It takes me back to those childhood days of tomato soup and grilled cheese sandwiches my mom would make me.  It was soup out of a can but it still gave you the warmth and cozy home feeling after the chill of the autumn air.

I had seen this soup recipe in our local newspaper and of course I couldn’t leave it alone…I had to put my own spin on it.  I am so glad I did because as we were sitting around the table in our shorts and flip-flops, my husband said to me that if we weren’t already married, after eating this soup he would have married me!  How is that for a testimonial on how good this was?

This is super easy to make so even on a busy day, you can have this for your family dinner.   A salad and some crusty bread will make it a complete meal.

Cold weather will be here soon and I will be making this again.  Heavy socks, a warm sweater and a bowl of this soup will take me back to my mom’s kitchen.  I don’t know about you, but it doesn’t get any better than that.

 

French Onion Soup

I’m not sure if you’ve noticed it like I have but everything we do in life lately seems to be all about the new and improved, the bigger and better version of what has already been done.  Most movies are remakes of classics, technology is something we all must have the newest version of and the old version is usually only six months old.  Even restaurants and chefs have to try to do something new with the old and revered.  Maybe I’m just getting older but sometimes I don’t want the new and improved.  I want the classic, the thing that’s been tested time and again and can stand on its own merit.

I want French Onion Soup.

I could have done this the easy way and gone to some restaurant, but I don’t think even they take the time to do it right, as it always seems bland and tasteless.  It’s a classic and deserves the respect and the time needed to make it wonderfully satisfying and flavorful.  I turned to the one person I knew that gave it that respect, the one person that started us all down the road of loving food.

I turned to Julia Child and Mastering the Art of French Cooking.

Don’t be intimidated by this book or the fact that Julia is the guru of fine cooking.  She makes everything so simple to follow.  She also uses wine and cognac in this recipe, so if you’re anything like me, you like it already!

To do this right it is a process.  You can’t skimp on the time or the effort it takes.  If you do you will lose the richness and the flavor it gives you.  This is one of those recipes where you will again take the first spoonful, close your eyes and savor the deep beef broth, the sweetness of the onions and the texture of the toast.  The only word you will be able to usher in a soft breath is “YUM”.

It’s that good.

What’s in the Pantry?

Let’s face it.  There are always going to be those times where you just don’t feel you can find another minute to get things done.  For the last two weeks, it seems I did not have any time at all.  I had been overwhelmed with baking (cheesecakes for a friend), taking a continuing education course for my profession (it certainly would have helped if I had not waited until the last-minute), food judging for the area home shows and the list goes on and on.

The other night I came home and my husband asked me what was for dinner.  I just looked at him, probably like a deer in headlights.  I hadn’t even considered dinner and now it was already late.  I didn’t want to go back out to the grocery store, so we had to figure out something.  That’s when operation pantry surprise went into action.

We have always kept something in the pantry we can work with.  You never know if there would be people collecting for a food drive or the electricity is going to go out.  I took a look in the pantry to see how my creative juices were going to flow.  I had soup, noodles, canned chicken and a jar of roasted vegetables.  The creativity started to flow.

I was able to put together a meal that was easy, fairly quick and satisfying for the family.  The next time you don’t have time, but you have hungry eyes waiting for you to feed them, don’t order a pizza.  Look in your pantry and see what you can find.  I’ll bet it will be something good.

Forget Take-Out

My husband is sick and I am not a nurse. In fact I’m pretty bad at it, but I called him during the day to see how he was doing and he said he thought he might be feeling a bit better.  He was a little hungry.  He didn’t have a cold, but my first thought went straight to chicken noodle soup.  Hmmm….that really wasn’t going to work for me but I had to make something that would be easy on his stomach.

I thought I had heard somewhere that ginger was good for the stomach.  Well, it sounded like a good idea anyway, but remember I’m not a nurse. And in my opinion, wonton soup is like chicken noodle soup and I remembered when I was looking at the new Fine Cooking magazine there was a recipe that had me interested. It was in the category of easy dinners.  This was perfect!

I came home with all the ingredients I needed for the soup and there he was lying on the sofa, just like any man who thinks he is dying.   I told him I would make him some soup and he would probably feel much better.  This was so easy to put together that even my friend Emily would be able to make it and so fast I think I beat a really good Chinese delivery.  Plus I had the added bonus of witnessing a medical miracle.  My husband was about to rise from the sofa and proclaim good health once again.

In no time at all I had the soup made and poured two wonderfully aromatic bowls, offering one to my husband.  However, in a really sad voice said he wasn’t hungry.  Wow…perhaps this really wasn’t drama. Perhaps he was really sick.  So I poured him a glass of ginger ale and I sat down alone and devoured my wonton soup. It was so good!  I felt bad that my husband had to miss it but I throughly enjoyed it.   It was like take out without the wait.

On the downside, it was not the medical miracle I anticipated.  My husband went to bed without any dinner. On the upside, it was a great bowl of soup and not a lot of trouble, ranking a very high YUM on the taste thermometer.

Make it some night when you want a light dinner,  playing nurse or just wanting take out without the wait.  You’ll be glad you did.
